Ingredients
- 1 lb large shrimp, peeled and deveined
- 2 tbsp olive oil
- 4 cloves garlic, minced
- 1 cup heavy cream
- ½ cup parmesan cheese, grated
- ½ cup sun-dried tomatoes, chopped
- 2 cups fresh spinach
- 1 tsp Italian seasoning
- Salt and pepper to taste

Heat olive oil in a large skillet over medium-high heat. Season shrimp with salt, pepper, and Italian seasoning.

Cook shrimp for 2 minutes per side until pink. Remove and set aside.

In the same skillet, sauté minced garlic for 30 seconds until fragrant.

Add heavy cream, parmesan, and sun-dried tomatoes. Stir and simmer for 3-4 minutes until slightly thickened.

Add fresh spinach and stir until wilted, about 1-2 minutes.

Return shrimp to the skillet and toss to coat in the creamy sauce. Serve immediately over pasta or rice.
